Sardinia is an island at the heart of the Mediterranean where the ancient tradition of catching and preserving tuna is still very much alive, as evinced by the typical tuna-fishing nets found in Carloforte and Sant'Antioco.

Sardinia is also renowned for the production of dried mullet roe. Mullet roe has its ancient origins in the lagoon of Cabras, where it is produced to this day.
For many people, dried mullet roe has been the most successful Sardinian speciality of the past decade.
It can be used to flavour pasta or, more simply, as an hors d'oeuvre, cut into strips and served with extra-virgin olive oil.
